CHURMA with the Daal Baati

It is unbelievable how easy it is to create an accompaniment with your traditional Rajasthani Bhojan. This definitely is rich in calories, but an accompaniment is usually taken very judiciously. Enjoy...

Ingredients

  • 200 gms aata to be steamed(u can do this with the baati aata)
  • 3/4 cup ghee
  • smallest pinch of salt
  • 1 cup boora or ground sugar
  • 1/4 cup mava
  • 1/2 tsp elaichi pdr
  • few slievers of almond,pista
Method
  1. Sieve aata
  2. add salt,rub in ghee.mawa
  3. add sugar pdr
  4. garnish with elaichi pdr,almonds pista sliver

Daal Baati ki BAATI

This is a tried and tested recipe. It is a bit tougher than conventional breads that we prepare, but the flavor and impact that this one creates in gatherings is unbeatable.

Ingredients
  • 1/2 kg aata
  • 1 cup melted ghee.
  • 1tsp salt
  • 2tbsp thick curd
  • 100 gms paneer100 gms boiled peas
  • little chopped ginger, green chillies, coriander,
  • salt to taste
Method
  1. Steam aata. 1/2 kg aata to be steamed by tying in a muslin bag in the pressure cooker for ½ hr. Simply take a muslin cloth put the aata on it and tie the end with a wire or tie. Fill a small pan with water and cover with a seive or porous plate. Place the aata on top and steam for 30 mins in pressure cooker without the whistle. TIP: Do not use a rubber band to tie the muslin cloth... it melts !!!
  2. Remove from cooker and break apart the rock of aata while still hot. Crush it and seive it.Add salt and ghee and rub it in well.
  3. Add curd and enough water to make stiff dough
  4. Prepare paneer mixture by adding boiled peas, paneer, ginger, little garam masala (if desired) and salt and keep aside.Make 1.25 inch balls of the aata
  5. Flatten the ball a little and stuff paneer (similar to aalloo parantha but less stuffing)

  6. Make all the baatis and Cover with wet muslin cloth and keep aside for an hour.
  7. Pre heat oven at 350F for 10 mins

  8. Put prepared baati on aluminium foil in the oven and bake for 30 mins at 350 F
  9. Let it stay in the oven for another 30 mins at 300 F
  10. Leave them in the oven till you need to serve
  11. Serve piping hot after dipping in hot melted ghee.

Daal Baati ki DAAL

The Gaur Recipe

Tried and tested, this is the recipe that our friends, the Gaurs use to prepare the traditional Daal Baati ki Daal... fairly easy and very delicious, this daal requires the use of a lot of ghee. For low calorie option, please keep visiting us for updates

Ingredients:
  • 1 cup dhuli urad
  • 1cup mix of moong,arhar,chana daals
  • 4 medium sized tomatoes
  • 5 pods garlic crushed
  • 2"pce of ginger chopped fine
  • 1 green chilly " "
  • coriander for garnishing.
  • 1tbsp. Ghee
  • Pinch of asaefoetida(hing)
  • 1/4 tsp of methi daana
  • 1/2 tsp haldi
  • salt to taste
Garnish walla tadka:
  • 2 tbsp ghee
  • 1 tsp jeera
  • 1tsp dakhni mirch (for color)
  • few whole red mirch
  • 1/2 tsp garam masala freshly ground
Method:
  1. Soak daals.
  2. Take 1tbsp of ghee.add hing ,methi,daals,whole tomatoes,ginger,green chillies,haldi,salt to taste,8 cups of water in a cooker. Boil daal for 1 whistle.
  3. After the steam has gone out on its own,remove tomato and sieve well.
  4. Add back to daal. Boil again.
  5. Garnish with coriander,garam masala,tadka serve hot with lemon
